Simple Roasted String Beans

A quick and easy roasted vegetable side dish!

Ingredients

  • 1 pound fresh string beans
  • 2 tbsp olive oil extra virgin
  • 1/2 tsp sea salt
  • black pepper season to taste
  • 1 bunch green or spring onions

Instructions

  1. Preheat oven to 420F. Wash the green beans and cut or snap off the stem end. Wash the spring onions and watch out for dirt inside the onions. 

  2. Line a large baking sheet with parchment paper. 

  3. In a bowl or on the baking sheet, toss the string beans in the olive oil, salt, pepper, and any additions such as lemon juice. 

  4. Spread the beans into a flat layer on the baking sheet and bake for 15 minutes. The beans should be soft when cooked, but not mushy and overcooked.

  5. While the beans cook, cut up the spring onions into small rings. Be sure to remove the root end of the onions and any damaged tops. 

  6. When the beans are done, toss with the spring onion and serve while hot. (optional: Add sliced almonds before serving).

Recipe Notes

Try adding a squirt of citrus juice to these beans before baking. Sliced almonds make a nice addition before serving.
